super moist and Delicious Vanilla zucchini cake is a very healthy Tea time snack. It is made up with 1&1/2 cup of shredded Zucchini and filled with chocolate chips ,this is the best way of having your greens. This delicious cake is my all time favorite and my kids love it a lot. I am sure if you try this recipe then you will become fan of zucchini too. I have used chocolate chips in my recipe which adds awesome flavor to this cake.
Zucchini Indeed is a very healthy green vegetable. Zucchini is low in calories and contains folate, potassium, Vitamins A and C, and manganese. To obtain the most antioxidants from zucchini, be sure to eat not only the flesh but the skin and seeds too. So I always try to make different varieties of Zucchini and vanilla zucchini cake is one of my favorite zucchini Recipe. For this cake frosting is optional. I love to have this cake without frosting as it is very delicious without any frosting. But if you like you may have this cake with creamcheese frosting. I am sharing my recipe with you.
Vanilla Zucchini Cake
INGREDIENTS
Shredded Zucchini - 1& 1/2 cup ( 2 medium sized)
Eggs - 2 ( large)
All purpose Flour - 1& 1/2 cup
Vegetable Oil- 1/2 cup
Sugar - 1 cup
Vanilla Essence- 1tbsp
Baking Powder - 1tsp
Baking Soda - 1/4 tsp
Salt- 1/4 tsp
Chocolate chips/ Milk- 1/4 cup
INSTRUCTIONS
Take a mixing Bowl and add 1/2 cup of oil.
Add 2 Eggs and beat well.
3. Now add 1 Cup of sugar and mix well.
4. Add 1 tbsp of orange Zest and mix well.
5. Add 1 tsp of vanilla Essence and mix well.
6. Now take a mixing bowl and put a strainer. Add 1& 1/2 cup of flour, baking powder,baking soda and salt.
7. Sieve the mixture properly so that all lumps get removed. Keep the mixture a side.
8. Take a Shredder and shred Zucchini.
9. Measure 1 &1/2 cup of shredded Zucchini and put it in a bowl.
10. Now add flour mixture to Egg mixture and mix with the help of spatula in cut and fold method.
11. Add shredded zucchini to the batter and fold gently. Do not overmix the mixture now.
12. Add 1/4 cup of chocolate chips and fold with spatula.
13. Take a Greased baking tin .
14. Pour the prepared mixture in the baking tin.
15. Bake the cake in the preheated oven 375°F ( 180°C ) for 40 to 50 min.
16. To check if cake is fully baked or not ,take a tooth pick and insert inside the cake. If it comes out clean it means cake is ready.
17. Take out the cake on a wire wreck and let it cool down completely.
18.Now Cut it in pieces and enjoy with your favorite tea.
NOTES
Always use fresh Zucchini to make this cake.
You may use any vegetable oil of your choice.
I have used chocolate chips which gives very good flavor to this cake but if you don't like you may replace it with milk or walnuts.
Always preheat oven for 10 min before start baking.
You may store this cake in air tight container and refrigerate . It will remain good for 5 to 6 days.
Its a very healthy and nutritious cake for kids and adults.
You may replace cane sugar with brown sugar .
