Namak pare is a crunchy and delicious salted snacks famous in all parts if India. Its is also called Mathri in Punjab and U.P. Namak pare are usually made using maida called as All Purpose flour and semolina( sooji). Sooji gives crispy flavor to Namak Pare. The ingredients that go into making namak pare are so common and are easily available in everyone's kitchen.
This recipe does not require a lot of time and can be made easily as the dough needs to be rolled like a chapathi and needs to be cut into diamond shape with the help of a knife or a cutter. My friends Usually ask me how to make crispy namakpare. I am sure friends if you follow my procedure you will definetly get crispy and yummy Namak Pare. I am happy to share my method of making Namakpare.
Namak Pare Recipe
INGREDIENTS
All Purpose flour( Maida) - 4 cups
semolina( sooji) - 1 cup
vegetable oil - 1/4 cup
salt- 3tsp
Ajwain ( carom seeds) - 2tsp
Oil to deep fry
Water to knead the dough
INSTRUCTIONS
In a bowl, add all purpose flour, add sooji, add carom seeds, salt and mix well.
2. Now add oil slowly and mix the dough with hands. once all oil is added then make sure you are able to make a ball in your hands. Its a very Important step. If you are not able to form a ball then add little more oil .If oil is less then Namak pare won't be very crispy.
3. Now rub the mixture well with both hands so that oil should be mixed evenly in whole mixture.
4. Add water slowly to make a soft dough.
5. Cover the dough and leave it for 15 to 20 minutes.
6. Heat the oil in a pan at medium heat.
7. Mix the dough again to get smooth texture.
8.Take a small size portion of the dough and make a round ball.
9.Roll out the dough like a thin chapathi.
10.Cut the roti into diamond shapes small or large diamonds using knife or cutter.
11. Now before deep frying namak pare check if oil is proper hot or not. pour a small peice of namak para first in oil if hot bubbles r coming it means oil is ready.
12. Now Put the diamond cuts into the oil. First deep fry them at high heat and then let them turn golden brown at medium heat.This process will make Namak pare crispy.
13. Once they are turn golden brown then take out namak pare from oil to tissue paper
14. Let them cool. Crispy Namak pare are ready to serve.
