Today’s recipe for Freezer-Friendly Cheesy Stuffed Protein Rich Veg Bell Peppers is a classic. It’s a favorite of mine and I assure you’ll love it too! It is a dish of its own, balancing protein, vegetables, and whole grains, all in one meal. It can be used as a healthy snack or a side meal. I like to use colorful Bell peppers as it makes this meal attractive and my kids love to have it.
All Bell peppers have there own taste. So I tried to use 4 different colorful Bell peppers in this Recipe. I have tried to make it protein rich and healthy so that adults and kids both can have all benefits in a single meal. I have used Mozzarella shredded cheese which is favorite of all. Cheese enhances the taste of stuffed bell peppers .

Cheesy Stuffed Protein Rich Bell Peppers
INGREDIENTS
Colorful Bell Peppers- 4
Olive oil- 2tbsp
Asafoetida ( Hing)- 1tsp
Cumin Seeds- 2tsp
Chopped Garlic- 1tbsp
Chopped Onion- 1 cup
Sprouted Moong - 1/ 2 cup
Tofu- 1/2 cup
Grated Paneer - 1/2 cup
Boiled corns- 1/2 cup
Boiled sweet potatoes- 1/2 cup
Italian Seasoning - 2tsp
Salt to taste
Tomato Ketchup- 2tbsp
Chili sauce- 2tbsp
Shredded Mozzarella Cheese- 2 cups
Cumin powder- 2tsp
Chaat Masala - 2tsp
Lemon Juice - 2tbsp
INSTRUCTIONS
Wash Bell Peppers and cut there tops with knife. Take out the seeds with the help of knife and make the hollow space for stuffing.
2. Put the pan at medium heat and add oil, Hing, cumin seeds.
3. Add chopped Garlic and sauté till it turns golden brown.
4. Add chopped onion and sauté till it turns golden brown.
5. Add sprouts and mix well.
6. Add tofu and mix well.
7. Add corns, paneer, sweet potato and mix well.
8. Now add Italian seasoning, salt, chaat masala, cumin powder and mix well.
9. Add tomato ketchup, chili sauce and mix well.
10. Add lemon Juice at the end and mix well.
11. Stuffing is ready.
12. Now fill the Bell Peppers with the prepared Stuffing .
13. Prepare all Bell Peppers in the same way.
14. Now arrange Bell peppers on a greased Baking tray and cover the Bell peppers with cheese.
15. Now Bake Bell Peppers in preheated Oven at 400°F ( 200°C ) for 20 Minutes.
16. Take out Bell peppers and let them cool.
17. Delicious Cheesy Stuffed protein Rich Bell Peppers are ready to serve.
Notes
You can choose any Bell pepper of your own choice.
You can add your own spices and fillings as well as per choice.
I made this recipe less spicy but you can make it more spicy according to your taste.
Always preheat oven for 10 min before keeping stuff inside.
