Rabdi Tart is one of the drooling desserts that you cannot resist. Its my one of the favorite dessert that I like to make on all ocassions for my family and friends. Rabdi tarts filled with delicious chilled Rabdi make it mouthwatering. when you take bite of tart filled with sweetened and chilled Rabdi it gives a awseme taste. Rabdi Tarts are not difficult to make. I have made these tarts in a very simple and easy way.
For Rabdi Tarts first we need to make Kesar Rabdi. Basically Rabdi is a sweetened evaporated milk dish made by boiling milk on low heat for a long time. But I have made Instant Kesar Rabdi which gets ready in half time as compared to original method. It gives same taste and similar texture to Rabdi. Rabdi is full of nuts which makes it more delicious.
Once Rabdi is ready we need to make Tarts . Tarts are also very easy to make. Usually Tarts are made in Tarts mould. But I have made tarts without using moulds. These butter tarts are so crunchy and less sweet in taste which can be eaten even without Rabdi sometimes. I am delighted to share this awseome recipe of Rabdi Tarts with you.
RABDI TARTS RECIPE
INGREDIENTS
A. Instant Kesar Rabdi
Milk - 1 litre
Milk Powder- 1/2 cup
Bread piece -4
Mixed nuts ( almonds, cashwenuts,pista) - 1 cup
Saffron strands or Kesar
Cardamon powder - 2tsp
B. For Tarts
All purpose flour- 1 cup
Salted butter - 1/2 cup
Icing sugar-1/4 cup
Salt- 1tsp
DISCRIPTION
Preparation time - 1 hr
Number of tarts- 12-14
Recipe Of Instant Kesar Rabdi
First boil 1 liter of milk in heavy bottom pan.
Cook milk at low heat for 10-15 minutes and stir in between so that milk should not stick at bottom.
3. Now transfer the milk in a non stick pan and cook for a while.
4. Add 1/2 cup of milk powder and mix well.
5. Cut bread pieces and grind it into powder.
6. Add Kesar Milk to pan and mix well.
7. Now add bread crumbs to mixture and mix well.
8. Chopped the nuts into fine pieces and add it to the mixture.
9. Add sugar, cardamon powder to the mixture and mix well.
10. Scrap the sides and mix it to the mixture.
11. Cook the mixture for few minutes and Instant kesar Rabdi is ready.
12. Transfer this Rabdi to a bowl and decorate with dry fruits. Let it cool for some time.. Now cover it with a cling film and refrigerate for at least 1 hr before serving.
Recipe Of Tarts
Take a mixing bowl and put a sieve.
Add 1 cup of all purpose flour,icing sugar,salt and strain the mixture so that no lumps should left behind.
3. Add 1/2 cup of chilled butter & mix it with with hands in mixture.
4. Once it starts holding shape then add water in parts to make a dough.
5.Make dough neither too soft nor too hard.
6. Cover dough with a cling film and refrigerate for 10-15 min.
7. Divide the dough in 2 halves and roll with a rolling pin like a chapati.
8.Cut round tarts using round cutter.
9.Prick each tart with fork.
10.Put the tart base on a muffin cup with the upside down and set it with hands.
11.Arrange the tarts in baking tray and bake in preheated oven at 375°F (180°C) for 15 to 20 minutes.
12.Tarts are ready,let them cool at room temperature.
13.Fill the tarts with chilled Rabdi and serve.
Notes
For making tarts you may use tarts molds instead of muffin cups.
You can store tarts in a air tight container for 2 to 3 weeks. They stay fresh.
