Coconut ladoos are the most popular sweet of India. It is made on all occassions. Holi is coming so I decided to make these delicious ladoo on this auspicious occasion. Coconut Ladoos are very easy to make and take very less time to get ready. They are made with coconut powder, milk, cardamon powder, sugar. These ladoos are my all time favorite. I like to make them even without any occassion in my daily life. My family loves to eat these yummy ladoos a lot.
Coconut ladoos are not only delicious but they are very healthy too. Traditionally, Coconut ladoos are made with khoya and unsweetened desiccated coconut but making khoya is a long process where milk is reduced to khoya/mawa by cooking it for long hours and then desiccated coconut is added along with sugar and cardamom powder to reduced milk solids along with some ghee and shaped into ladoos or burfi. This recipe of Coconut ladoos cuts short the cooking time and is ready under 10 minutes.
Coconut Ladoo/ Nariyal Ladoo
INGREDIENTS
Coconut powder - 2 cups
Milk- 1 cup
Sugar- 1cup
Milk Powder- 1/4 cup
Ghee ( clarified Indian butter)- 1tbsp
Cardamon powder - 2tsp
Saffron ( kesar)- 2tsp
DISCRIPTION
Add 1tbsp of Ghee in a pan at medium heat.
Add 2 cups of coconut powder and roast at medium heat till it turns little brown in color.
3. Now add 1 cup of milk and mix well. Keep stirring the mixture until it is completely absorbed.
4. Add 1cup of sugar and mix well. Keep stirring until sugar absorbed fully.
5. Add 1/4 cup of milk powder and mix well.
6. Now mix few saffron threads in 1tbsp of milk and add it the mixture.
7. Now cook the mixture at medium heat with constant stirring for few minutes until it gets a smooth texture.
8. Add 2 tsp of cardamon powder and mix well.
9. Now mixture is ready to make ladoos. It should look like this before making ladoos.
10. Now grease hands and take small portion of mixture in hands and make Ladoo.
11. Roll ladoo in coconut powder and keep on plate. Rolling of ladoos in coconut powder gives a very nice texture to coconut ladoos and they look amazing.
12. Prepare ladoos in the same way. Delicious Coconut Ladoos are ready to serve.
NOTES
Always roast coconut powder at medium heat because coconut powder burnt fast.
Cook mixture at medium heat only with constant stirring.
Use heavy bottom pan or nonstick pan to avoid sticking of mixture at bottom.
Coconut Ladoos can be stored in refrigerator for 5 to 6 days. They stay fresh.
